Roasted raspberry and blueberry lollies

If you know me then you know that even if its cold i'm boiling. I'll do anything to cool down - these lollies have definitely helped!




Here's what you'll need:

  • 150g raspberries
  • 150g blueberries
  • 1/2 lemon (juiced)
  • 500g greek yoghurt
  • A dash of salt
  • 2 teaspoons of sugar
  • 4 tablespoons of honey



Pre-heat the oven to 150C. Pour the raspberries and blueberries into a large mixing bowl and add the sugar, salt and honey and stir. The get a flat baking tray a line with greaseproof paper. Add the berry mix to the baking tray making sure that all berries are in a single layer.





Roast the berries for 15 minutes - turn - and then roast for a further 15 minutes. Once done leave to cool for 10-15 minutes.

Whilst cooling prepare the yoghurt by adding the lemon juice and a couple tablespoons of honey. Once the berries are cool gently stir into the yoghurt, making sure not to mix (so as to create a marbled effect). Then add to your lollipop mould or into a freezable container and leave for a few hours.




I added a sprinkle of chocolate to some of the lollies!
